Onions add flavor when cooking, thus avoiding the need for salt. The tops are edible as scallions as well as the flowers before they reach the papery stage. Choose long-day types for northern gardens and short-day types in the South. May new varieties are not as day length sensitive. Large, semi-flat onion with red skin, sweet red and white flesh. Grows best in full sun. Long-day type. HOW TO GROW ONIONS FROM PLANTS OR SETS: Plant as early in the spring as soon as the ground can be worked. Make furrows about 1" deep, carefully place plants or sets, lightly press in and cover with soil. Space 3" apart. Pull green tops as needed for scallions or allow bulbs to mature fully. One bunch will plant an 18' row (75 onion plants per bunch).

Allium is a diverse genus of bulbous perennials that includes such plants as onions, garlic, chives, leeks, society garlic and giant ornamental onions. They all have relatively high concentrations of sulfur compounds which give them their unique smells and flavors. When the plant tissue is damaged some of these sulfur compounds are released, which explains why we cry when we cut onions. The sulfur compounds can dissolve in our tears, where it forms sulfuric acid. In response to the acid in our tears, we blink and produce more tears. This gives the impression that cutting onions makes us cry.
