Mediterranean Sea Holly (Eryngium bourgatii) - Description
Eryngium bourgatii (Mediterranean sea holly, Bourgati's eryngo) is a species of flowering plant in the family Apiaceae native to Morocco, Lebanon, Turkey, France, and Spain. It is a perennial herb growing to 15–45 cm (6–18 in) tall. The spherical blue flowerheads have spiny bracts. Numerous cultivars have been produced for garden use, of which 'Oxford Blue' has gained the Royal Horticultural Society's Award of Garden Merit.

Sea hollies look different according to where they are found. Species from wet, marshy areas have greenish white flowers with small bracts. Others usually form basal rosettes, with spiny leaves, and cylindrical umbels of stalkless flowers.

Can also propagate perennials from root cuttings in late winter.
