Arugula (Eruca vesicaria) - Description
Generally, arugula is expensive to buy. Luckily for the home gardener, these plants are extremely easy to grow. As greens go, arugula has a more full-bodied flavor which makes it an excellent choice for bringing more flavor to a salad or sandwich.
Arugula (Eruca vesicaria) - Growth
Arugula is a cool-season annual. Grows best with cool weather, and withstands light frost. Fast-maturing crop with full heads ready to pick after 40 days, and baby greens ready in only 20 days. During warm weather, arugula tends to develop a more peppery and bitter flavor as opposed to its spicy, nutty taste in a cool climate.

Sow seeds directly in to the ground in spring, 2-4 weeks before the last frost date. For fall harvest, plant seeds in late summer. In areas with cool summers, it is even possible to sow seeds throughout the summer, every 3 weeks for continous harvest of arugula.Before planting, work in a 1" layer of compost into the soil. Sow seeds 1/4" deep, 1" apart in rows spaced 1 foot apart. You can also just scatter the seeds across wide rows or raised beds and then cover them with 1/4" of soil.In time, make sure to thin seedlings to 6-8" apart.
